Cornbread Tamale Pie
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 cup tomato sauce
- 1 cup waterer or stock
- 1/4 teaspoon pepper
- 1 tablespoon chili powder
- 1 cup corn
- 1/2 green pepper, chopped
- 3/4 cup cornmeal
- 1 tablespoon flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 1/2 teaspoon baking powder
- 1 egg, beaten
- 1/3 cup milk
- 1 tablespoon vegetable oil
Directions
- In a lightly oiled skillet, saute ground beef and onion. Cook until meat is browned and onion translucent.
- Then add tomato sauce, water/sock, pepper, chili powder, corn and green pepper. Simmer for 15 minutes.
- Preheat oven to 425F.
- Sift and mix together cornmeal, flour, sugar, salt and baking powder. Stir in the beaten egg. then mix in the vegetable oil.
- Place meat mixture in a oiled 2 quart baking dish. Top it with the cornbread mixture. Place in the oven and bake for 20-25 minutes or until corn bread is browned.
