Oven-Baked Vegetables

Great side dish! Part 2 of my recipes adapted from Cooking with Loula, Greek recipes from My Family to Yours by Alexandra Stratou. I did change the oven temperature to 400 instead of 350, what the original recipe called for. It might depend on the oven, I would keep an eye on it, in case it dries out.

Giant Beans with Grape Leaf Pesto

Part 2 of this week’s My Greek Table recipes. It called for giant Greek beans, I used Lima beans that was in my pantry. You can find giant Greek beans at a specialty store. This dish can also be a great for a summer barbecue.     Get recipe here.

Provencal Spinach Meatballs

This was inspired by The French Slow Cooker cookbook by Michele Scicolone. I modified the recipe to adhere to stove top cooking time. It can be served over noodles or rice for dinner. Or it can be served over toasted brioche rolls lined with arugula for lunch.
