Okra with Plantain (Quimbombo’)
Quimbombo, a dish I remember seeing at the kitchen table many times. My mother assisted me by making the plantain balls. She recalled that it was a stew that was made with whatever was on hand. Here I used the recipe below as a reference, but the rest is from my family to yours. Adapted from Cuba, The Cookbook by Madelaine Vazquez Galvez and … Read More Okra with Plantain (Quimbombo’)
Smoky and Sweet Turkey Chili
Great weeknight recipe! Quick, easy, and delicious! It was adapted from Katie Webster’s cookbook, Maple. I did modify a couple of things. The recipe called for adding 3 tablespoons of chili powder, I only added 2, and I omitted ground chipotle. It depends how much heat you like. I topped it off with shredded cheese but, you can also add avocado, cilantro and toasted … Read More Smoky and Sweet Turkey Chili
Fish Chowder from Fundy, New Brunswick, Canada
Found this great little cookbook while visiting New Brunswick, Canada this month. We got the chance to have lunch in the quaint coastal town of Fundy, known for the fish chowder. I believe this may be the recipe. It is absolutely delicious! The directions does state to put all the ingredients together at the same time however, I cooked the onions and vegetables first … Read More Fish Chowder from Fundy, New Brunswick, Canada
Chickpea Stew with Spinach and Chorizo
This is part 2 of my winter soup series. This hearty soup comes from the Catalonian region of Spain. I ended up adding more of the liquid from the cooked chickpeas . So you may want to reserve about 2 cups of the liquid instead of 1 cup. If you want to add grated cheese, I would recommend a Manchego cheese. Get recipe here.
Lentil Sausage Soup
A great hearty soup for a cold winter day! If you want, leave out the sausage and make it meatless. It would be delicious either way. Get the recipe here.

Olla Gitana (Gypsy Pot)
This winter squash, potato, pear and chickpea stew was even better the next day. You might have to cook the chickpeas a little longer and I would taste for salt. It didn’t say to add salt to the stew in the recipe but, I thought it needed it. It is a wonderful protein-rich, and no meat stew. Adapted from Rustic Spanish by Paul Richardson. … Read More Olla Gitana (Gypsy Pot)
Shrimp Bisque with Bourbon
This took a little bit of time to make, but it was worth it. If you don’t have a food mill, use a sifter. Make sure you press it to get all the liquid. Serve with crusty bread. Adapted from Fresh Fish by Jennifer Trainer Thompson.
By adding chorizo to this recipe, chef Einat Admony calls this her “not-so-Jewish” chicken soup. The chorizo gives it a smokey flavor. I did make a couple of adjustments to her recipe. I always start with 8 to 10 cups of water to all my soups especially if I’m serving the soup on the same day, can always add more. I also reduced the … Read More Chicken Soup

Spicy Meatball Soup
This week I’ll be featuring recipes from an Avon cookbook I’ve had since 1983. I haven’t looked at it or a long time, almost forgot that it had some great recipes. This recipe came from Latin America. The ingredients caught my eye, it’s not what I would typically put into meatballs. I did leave the olives out and added water to the soup using … Read More Spicy Meatball Soup
