Herbed Meat Kebabs

Due to our summers being short in the Northeast, we grill outside every chance we get. It can be made ahead of time therefor great for entertaining. They are served on pita bread with a spicy grilled salsa ( recipe will follow later this week) and a scoop of Tzatziki. Courtesy  of Einat Admony. Serves 6 to 8.

Herbed Meat Kebabs

Ingredients

2 pounds of ground beef

1 medium yellow onion minced or grated

1/3 cup of fresh parsley chopped

1/3 cup of finely chopped cilantro

1 tablespoon plus 1 teaspoon of olive oil

1 tablespoon plus 1 teaspoon of water

3 tablespoons of freshly chopped mint

2 teaspoons of kosher salt

1 teaspoon of ground cumin

1 teaspoon of ssweet Hungarian paprika

1/2 teaspoon of ground cinnamon

1/2 teaspoon of freshly ground pepper

  • Put all the ingredients into a large bowl and mix well. with your hands. Shape into 3 inch cylinders and 1/2 inch in diameter, put them on skewers and refridgerate till ready to use.
  • Grill 4 to 6 minutes on each side
